    This was a really good roast chicken. The skin was well browned, crispy, and particularly flavorful. I liked the mustard butter rubbed under the skin; it added a lot of flavor that complimented the chicken well. I'd definitely consider salting the chicken in advance in the future and possibly cutting back on the mustard a bit as it was a hint too strong.
