Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

    Tinkered with this a lot. Omitted the celery. Used a smoked ham hock instead of a smoked pork chop. Added 1 tablespoon chopped fresh basil, 2 teaspoons chopped fresh marjoram, 1 teaspoon dried cumin and 1/2 cup of dry white wine. Turned out quite nice.
