    Great use of surplus summer tomatoes from garden. I loved the concept of tomato bread stuffing. I would go with 3-4 cups instead of 2 1/2 cups of bread cubes especially if tomatoes are very juicy like mine were. I had to add about 1 1/2 cups cooked ribbon pasta to soak up the sauce and that worked really well. Added some spinach before baking and scattered basil on top. Consistency and taste Is awesome.
