    Great cake, very easy to make with a lot of carrot and fruit. Improved over a few days keeping and the pecans added an extra dimension of crunch. Everyone loved them. I made the recipe as a tray bake as I don't like too much icing and that worked well. Except I forgot to half the recipe for the icing so now have some in my freezer.
