    This is really so easy and so delicious. I had to take time to be sure to note this dish and how wonderful it is. Easy dinner at home or even for company. It is really delicious with the recommended coconut rice with raisins. I did not have any bell peppers, and although I'd like to have added it, I still would make the dish anytime even without.

    This is a new favorite. Such delicious flavor and very easy to put together. It tastes impressive. I just used unsweetened coconut milk from a can and thought the result was great (I may someday get around to cracking open whole coconuts...). Served it with plain steamed rice. Cooking time was exactly as directed in the recipe.
