Potato and chorizo tacos (Tacos de papas con chorizo) from Tacos, Tortas, and Tamales: Flavors from the Griddles, Pots, and Street-Side Kitchens of Mexico by Roberto Santibañez and J. J. Goode

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Can substitute jalapeño chiles for serrano chiles.

Really delicious. I didn't think I'd like potatoes in a tacos, but they picked up the flavour of the chorizo and were delicious.

Delicious, basic, quick - my go-to recipe for chorizo/potato tacos.

It is hard to go wrong with chorizo and potatoes together, and these tacos were delicious. If you have spicy chorizo you may not need the additional chiles the recipe calls for- just adjust to the spice level that works for you.
