This dessert is actually pretty simple. You can do a lot of it well ahead of time and assemble and bake it when you wish. It looks very elegant and tastes wonderful.

This is essentially a highly-flavored bread salad that is put back into the bread. It needs to sit overnight, after which it is delicious. A bit messy to eat but wonderful. Only worth making when local tomatoes are available. The recipe makes more than you need to stuff the baguettes; cut back on the bread. The recipe in my book does not have canned pimentos; I used a green pepper.

This is easy and good. You can use a very hard non-green mango but real green mangoes (which still have white flesh) are better. I peel the mango. The pickle will keep about a week refrigerated.

A similar recipe is in Italian Food. Better with fresh than dried fennel stalks. Try using unsmoked SE US country ham. Needs a proper braising pot. Takes about 2 h to cook though the recipe says a shorter time.

Ingredient list is wrong. This is an excellent dish. There is a similarity to tandoori foods in the spice mix but the result is completely different.

Works well. Variations -- a generous pinch of thyme in the milk, about 1/2 c each of finely diced ham and finely diced raw onion, romano and breadcrumbs on top, fresh or sauteed or reconstituted dried mushrooms with the potatoes.

Blue cheese and celery! what more do you need? You can cook it till the celery is mush, or leave it a tad al dente.

This is easy to make and can be done with other cuts of lamb such as shanks. It is austere but rich at the same time. (Not fatty-rich but mouthfeel-rich due to the gelatin from the lamb.) No problem with cooking it the day before and chilling to remove the fat before serving.

Good any time but particularly in the winter. It is worth doing the layering and cutting the way she describes. I have never flamed the wine and I often cook it slowly on top of the stove (electric burners).

If dried cherries are pliable, don't need to soak them, but add 1-2 T H2O to batter. Could make 2 narrower logs

Pretty good. If you don't use instant grits/polenta, wait till the end to add the tomatoes and olives. Otherwise they will be mush.

A good one. Needs hot spices. Lite coconut milk works. Chard is OK instead of spinach -- needs more greens than the recipe says. This is a very forgiving recipe and is delicious.

Way too much sugar, more than any other biscotti recipe I have seen. Even 1 c white sugar plus 1/4 c brown sugar is too much. Need about 1/4 c more flour unless the cornmeal is a fine grind. If the cornmeal is coarse, the biscotti will be gritty. Dried sour cherries are OK instead of currants.

The underneath will be scorched if it is dark brown at the edges. Good with challah but in that case don't sugar the peaches.

People really like these, even with the thick crust. I use a bigger pan (9X13) and make more filling so that the crust is not so thick -- add more cranberries, there is no need for more choc chips. Can cut smaller for Xmas

Try the chocolate glaze from p 185 of same book. The nuts do not stick to the bars if they are ground to a slightly sticky meal. Either grind them finer or mix them with a small bit of the batter. But keep them as a distinct layer. Cut into 36 squares for Xmas.

Make about 2/3 recommended size for Xmas cookies. Would make a nice sandwich with chocolate buttercream.

This is one of many similar recipes that make a soup/stew of corn, beans, and winter squash. Easy to modify, like by making it more spicy. Good for cool weather.

I use EVOO, which is just as good. This makes a fantastic gift but you have to tell people to eat it with cheese, not jam. Goat cheese is great with it. Can be made into 2 loaves instead of 4. Also published in Beard on Bread
