  • This is an exceptional salad. It's light, flavorful, and colorful.

  • Brought me back home to NYC. The amount of rice is massive and could likely be halved. Although the quantity was very plentiful, it wasn't a heavy meal. I appreciate how it's flexible and adaptable to whomever is mixing it together and their individual preferences. The white sauce is deceptive, because it seems like there's cheese somewhere, which is a good thing. I used chicken breast as preference.

  • Really good pancakes. The whipped ricotta had an odd texture, but was nice when combined with whipped cream.

  • Elderflower is excellent and if you haven't tried it before you're in for a treat, however this cake is far too sweet - even after reducing the sugar by 3/4 c. I replaced the Greek yogurt with Icelandic yogurt (skyr) and doubled the zest. The cake holds its shape nicely, which is a plus. Since the cake itself was so sweet I didn't add the glaze, but paired it with homemade meyer lemon curd.

  • Reminds me of Spanish tapas as a small meal or side dish. I've made this several times and it always comes together nicely with a wide array of flavors and textures.

  • Since it's not apricot season I used slab apricots reconstituted with warm water for 1 hour for the mostarda. The duck cooked nicely and really only needs a quick searing.

  • Very good and I don’t even like mushrooms. Made with hen of the wood, trumpet royals, alba clamshell and brown clamshells / chef’s mix. Lemon comes through nicely.

  • Very simple, quick, and unique, but slightly bland. I added a bit more garlic and chili to make it more flavorful.

  • Worked out better baking it. Added black beans and cilantro cream sauce, which really elevated the dish. A poached egg rounded it out to make a full meal.

  • I substituted pistachios for the peanuts and used a tamarind date chutney (with cumin added) instead of the additional sugar or jaggery. It turned out wonderfully. The provided herb sauce recipe wasn't great on its own, but helped round out the whole recipe. I will definitely make this again.

  • Bought in Phnom Penh after a great visit to the restaurant. I checked if I'd be able to just buy it when I got back home, but alas it's not readily available. I've made several recipes and they are great. It's such a special restaurant that I was glad to be a patron of... and now to have some of those excellent recipes, too.

  • This is on heavy rotation for me. It's a super moist, and tasty chocolate cake made from scratch (which I prefer to box mixes). Nordicware has some excellent "celebration" cake pans that are thin and help this cake bake in minutes. Use really good quality cocoa and be prepared for recipe requests.

  • Similar to Andy Ricker's Pok Pok steak salad, but with more readily available ingredients. Excellent with the coconut sticky rice, too. I don't make my own rice powder - it's available at a well stocked Asian grocery. Very flavorful!

  • Similar to coconut sticky rice, but I would also reduce the amount of sugar. I have made it with reduced fat coconut milk and prefer regular coconut milk as suggested in the book.

  • I always buy fresh roma tomatoes and cook them down, but it takes hours to reduce them, not the 30 minutes quoted in the book. The fresh ingredients make it that much better.

  • I tend to make a sizable quantity for this and use it in random things. I don't even like mushrooms, but for some reason - as they state in the book - it's a gentleman's umami instead of MSG. It works, it's delicious, get a vitamix dry container and make some delicious flavor powder.

  • I skip some of the thrice cooking and it really cuts the time. Sometimes I double the sauce, because it's great. Very accurate recipe compared to what's served at the restaurant... and those rice cakes are awesome. Make sure you get the ones that are in the frozen food section and not the shelf stable dry discs. Another tip - if you go with the bitter melon don't use it if you cut it open and it's red or has red seeds. Those are toxic.
