I thought it was well worth blitzing up the paste for this dish. My husband wasn't keen on one of the flavours though. Maybe the galangal?

My husband's new favourite. I cheated by baking in the one dish, and by adding brandy and prunes to cooking juices and pouring over clafoutis and vanilla ice cream instead of accompanying with specially made ice cream. Certainly not a quick dish (over 3 hours cooking!), but quite easy.

This was the best cheat's apple tart just with apricot jam mixed with brandy under the sliced apples as well as brushed over.

This pie is long in the preparation but certainly delicious. I tossed the left over roast chicken bones and carcass into a pot to make equally delicious stock.

Easy, tasty, relatively foolproof? way to enjoy fish. I used roasted red capsicum as had no fresh green ones in hand, and 1/4 tsp of chopped red chillies as had no green chilli, and omitted the prawns. It's hard to believe that it could have been nicer if I'd followed the recipe. Don't forget the crusty bread.

I didn't bother reducing the orange juice so the cake was a bit soggy. Next time I'll do the reducing but chuck most ingredients in the food processor to save time and see how it turns out. It certainly tasted good, but the best thing is that it uses pumpkins.

This made a yummy "quick & easy" when I substituted shredded cooked chicken for the livers. It's now my favourite way to use truffle oil.

Strawberry and amaretti is my new favourite pie. This recipe is quite easy, except next time I might make the pastry in the food processor so as to get the amount of moisture right. The recipe doesn't mention adding milk or water, but seemed too dry to make dough otherwise.

No need to bother with passionfruit ice cream. This is delicious with vanilla ice cream, with or without passionfruit as topping.

My favourite way to use fresh peaches or nectarines or plums. Very easy.

Tasty way to eat lentils. I didn't bother with the grilling.

I love the beetroot cooked this way.

I find this is great even with overgrown zucchinis. I hollow them out a bit and cook the halved zucchinis in the oven while preparing the filling.
