  • Double split pea soup

      Very good! I halved it, used yellow peas only, cut out the carrots added at the finish, subbed edamame for English peas. I think the full amount of carrots would be too sweet. Color looks nicer w.ith just yellow peas

      This was more work, and dirtied more dishes, than any other split pea soup I've made and I didn't like it as much. Made 1/2 recipe (still a lot) using all green split peas. Instead of straining and processing the soup, I used an immersion blender, since I knew I'd want all the stock. I didn't care for the texture of the pureed soup and the color got murky (maybe yellow peas would look nicer). The small amount of carrots that were cooked separately wasn't enough to improve the flavor or appearance. There's an error in the amount of ham - 4 oz is not 4 cups - I used 4 oz for 1/2 batch as it didn't seem like that much. Will stick with easier one-pot recipes.

  • Beef and barley soup with mushrooms

      No way were short ribs going to cook in one hour; I simmered them an hour before adding the barley, then simmered another hour. A lot more liquid was needed. The mushrooms added a lot of flavor, but generous amounts of salt and pepper were also needed. I stirred in some chopped spinach at the end for extra greenery. We enjoyed this with pecorino grated on top. Recipe makes *a lot* of soup.

  • Oatmeal-raisin cookies

      Omigosh! These are not the dreadful boringly white colored oatmeal cookies you get from the store. They are crispy/chewy cookies that you might find for a couple dollars each at a fancy bakery. I have never tasted such delicious oatmeal cookies.

      I made this recipe for a sick friend. It has a very pleasant, refreshing taste and is not as sweet as ginger ale. I would make it again as printed for an adult, but would add more maple syrup if I were to make it for a child.
