This is a collection of recipes which the owners of Les Mimosas cooked for their guests over several years. Arranged by season, they feature fresh, local produce cooked simply. In Spring, artichokes and asparagus abound, Summer is the time of tomatoes and aubergines, Autumn is the beginning of the citrus and pear season, and winter is the time of soups and stews. In 1992, New Zealanders Denis and Sarah La Touche moved to the south of France. They bought a 19th-century maison de maitre in a village in the Languedoc region of France and restored it to create Les Mimosas, an elegant country guest house serving good cuisine and good regional wines.
