      Substituted red pepper for green, added minced scallions. Loved this recipe. Serve with ketchup (even from the bottle, if you don't have time to make your own). This is REALLY good, and somehow you do feel better when you eat this "junk food". Definitely a summer staple. I did modify, I just made single burgers, with a slice of cheese on the top (not wedged in the middle of two burgers) - sometimes there just be too much a of a good thing. 5 minutes per side for single burgers seemed to work to cook through. Lovely. Made extras for the freezer.

      Liquid needs to be added to the bottom of the pan (canned tomatoes and/or their juice) to prevent the onions from burning. The noodles were very al dente when made as directed.
