    This banana-walnut cake is very tasty. I've made it, often, adding chocolate chips. Recipe takes much longer to cook than book states. I find 55 minutes is just right. Recipe is flexible as it divides into mini loaf pans or doubles into a 9x13 Pyrex. Also, it freezes well.

      Love, love, love this cake! The only change I made was to cut the sugar back from 1 1/3 cups to 1 cup. Used frozen blueberries right from the freezer and the cake was perfectly done in 1 hour. The lemon glaze is so delicious and really makes this cake shine.
