  • Cauliflower frittata (Frittata di cavolofiore)

      A basic recipe, but quite good. Cauliflower does well in a frittata. The recipe says to cook the cauliflower until the butter has been absorbed. After about 10 minutes I still saw no sign of this and proceeded with the rest of the recipe, with good results. I do think halving the amount of butter won't do any harm.

      I can’t seem to add the recipe I cooked due to the fact that the book I used hasn’t been indexed. At least I think that’s the reason! Anyway I cooked Frittata di pomodori verdi from La Cucina Toscana and it was surprisingly good. Great weeknight supper dish for 2. We enjoyed it with a lambs lettuce salad, crusty bread and a glass of Vermentino. Salute!

      Delicious like last time. This is a go-to supper. I added a pinch of oregano to the tomato sliced

      My husband thought this was very good, I thought it could have used a bit more anchovies. Nice and simple.
