Hi. I just bought Emeril's Potluck hoping to find a a freezer friendly recipes for a friend who will be undergoing surgery. Any recommendations?

The two recipes I have made from this book have been great, but probably not for the freezer. The cucumber soup stores well and can be eaten over several days. The Mexican breakfast casserole is fabulous.

Looking through the Notes page for the book, it looks like a couple of members loved the chili recipe and that should be a good one to freeze.
