Red, Green and Yellow Peppers   Go to last post Go to last unread

I am NOT a fan of peppers.  I'm eating Vegan and they are in every other recipe. And usually at least a cup.  I know they serve as crunch.  Any suggestions for substituitions?

For crunch-equivalence: celery, cucumbers, chayote, jicama, apples, Asian pears, endive.

Crunch when raw, sweetness when cooked - in cooked dishes I'd probably use canned chopped tomatoes, or maybe some carrots.

My ideas in a few words - in my opinion peppers are quite mild in flavour, so you could really replace by a lot of things, or even leave it aside depending on the recipe. But then again I love peppers :)


For reds : In both cooked and raw dishes, I would agree with tomatoes, though would not use canned. More like small crunchy tomatoes.


For greens : Probably courgette/zuchini


For yellow : Mild onions, or maybe a finely cut part of butternut squash
