Anybody buy this? tell me, does it really focus on technique? I've seen books advertise techniques, then open it and find just a bunch of recipes. Thanks.

Hi, I have the book - reviewed the book for EYB - here and have started a group to cook through the book. Yes it does have 140 recipes but its focus is on technique. 


Single techniques that are a part of various recipes - such as whipping cream or making a stock or clarifying butter are all laid out in the recipes. Hollandaise, Demi-Glace and more set out on full pages of detailed instructions. The group is here if you'd like to join us. I truly believe working through this book will hone our skills and perfect various techniques in the kitchen.
