Converting a 9” pie recipe into hand pies   Go to last post Go to last unread

Can anyone tell me if there’s any particular modifications that should be made if I want to use a regular 9” pie recipe (with top and bottom crusts) to make hand pies instead? Specifically, the Concord Grape and Goat Cheese Pie from Sister Pie. I unexpectedly scored some concord grapes today and I just so happen to have a batch of All-Butter Hand Pie dough ready to go in my fridge already.

I don't have a ratio, but in my experience, you need a LOT more pie crust for hand pies.  They don't really hold that much filling, so the ratio of filling to crust is decidely lower in hand pies.
