Okay, I went on Amazon and did some reading. The Rick Bayless that you both recommended was not one that I own (I have One Plate at a Time and Mexican Everyday). I think I will get his Authentic Mexican for my son - there is a new 20th Anniversary edition from 2007. But, after reading the reviews of the other books you (robm) suggested, it was obvious that others agreed with your opinion. I found used copies of Ortiz and Martinez, and ordered them for me, and Truly Mexican I "saved for later". Martinez's book sounds like it would be a good read, as well as a good cookbook.
