What is "green garlic"?   Go to last post Go to last unread

I planted garlic this year...uhmmm, LOTS of garlic...and don't know exactly what I've got.  Is "green garlic" another word for "scapes", those sensuous curling flower buds I cut off?  Is there something other than a garlic-pesto thing to make with scapes?  My 5 different kinds of garlic have produced armloads of wonderful fragrant and tasty stuff, much better than anything I've ever bought at the store.  I hate to throw away that which may be precious to folks who are looking for green garlic at their farmers' markets.

Green garlic and garlic scapes are not the same. Garlic scapes are the flower buds and stems of the garlic plant. Green garlic is a young spring garlic bulb- often with the stem attached. The outer layers haven't been dried and are soft. The taste is milder but it can be used pretty much like any old garlic. Garlic scapes can be pickled or used in stir fries if those are what you have in abundance.

Each spring we eagerly seek out garlic scapes at the local garden club booth at our farmers market. We love to grill them lightly on the charcoal barbecue after first tossing them in a little olive oil and lemon juice. The result is a tender succulent side vegetable that we sprinkle with a bit of Parmesan cheese before serving. But even the folks in the garden club booth ask what in the world are we going to do with them when we buy them.

Thx for the answers, folks.  I look at the wheelbarrow full of garlic scapes and will try a few this evening on the BBQ.  El Nino gave California a perfect spring and my garden is absolutely overflowing!  And...I live alone, constantly looking for friends and even passers-by to accept veggies.
