I recently returned from a amazing trip to Siem Reap, Cambodia. There I discovered a wonderful cookbook entitled Nyum Bai (which means 'bon appetite'). It's in English and contains authentic Cambodian recipes from local restaurants. They are easy to follow and delicious!
