On one of the Food Network showdowns last evening, Thanksgiving was the main event. One family roasted a turkey covered in cheesecloth. The idea was that it would brown nicely, without burning.
I located a recipe by Michael Symon, "Michael Symon's Juicy Turkey Cooked in Cheese Cloth" and am excited to try it. Has anyone used this method of roasting a turkey before and if so, what did you think of the end result? Are there any little tricks or tips you might share?
