Parchment-baked halibut with pesto, zucchini, and carrots, from Health magazine -- can be made with any white fish fillets really & the parchment keeps the fish nice and moist so there is less worry about over-cooking. Other than shredding the veggies, this is really just an assembly job. I'm always a bit heavy-handed with the pesto -- I wish my husband liked fish because this one is an absolute favorite of mine!
Summer chicken stir-fry, from Health magazine -- a simple & tasty dish
Italian sausage and potatoes, from Good Housekeeping -- I always increase the amount of veggies in this one -- all you really need to do is a little chopping, get it in the oven, and a half hour later you have dinner
Grilled goat cheese sandwich, from Anna Thomas' Love Soup -- this sandwich promotes a ho-hum grilled cheese to a delicious meal, perfect for days you're really short on time
