OK, I admit it, I'm stuck in a cooking rut. Not for big meals, those I still have a massive backlog of ideas to work through but for simple, easy to prepare, weeknight meals. I was wondering if anyone would like to share their go-to weeknight dish, ideally one linked to an online recipe or that is quick to outline on here so that we can all increase our repertoires.


Is there anything you rely on to produce a tasty, quick and reasonably healthy dinner after spending all day at work? If so, please let me know becuase I'm feeling decidedly uninspired at the moment.


To get the ball rolling, my go-to recipe is a riff on chachouka, although if I'm really hungry I'll bulk it up with some chickpeas or other pulses. I'm not the best at following a recipe I admit!

My go-to dinner recipes at present revolve around variations on chicken breasts, pasta/grains and green vegetables as my daughter is a very fussy eater.  But she goes off to college in a month so I can then have much more experimental recipes.  A few go-to recipes that are available online (more fish & vegetarian) for nights she is out are:


Shakshuka from Plenty by Ottolenghi


Roasted butternut squash & red onion with tahini & za'atar from Jerusalem by Ottolenghi & Tamimi


Pan-fried white fish with crushed cauliflower and peas from Belleau Kitchen


Cumin seed roasted cauliflower with salted yoghurt, mint, & pomegranate seeds from Cook This Now by Melissa Clark (I make this at least once a month - it's addictive)


Baked fish steaks with potatoes, tomatoes & olives from Cuisine Magazine


I hope other EYB members contribute here - I'm sure lots of members are looking for recommendations for every night dinners.

Of my go-to-recipes here are a few you can view online:


Parchment-baked halibut with pesto, zucchini, and carrots, from Health magazine -- can be made with any white fish fillets really & the parchment keeps the fish nice and moist so there is less worry about over-cooking. Other than shredding the veggies, this is really just an assembly job. I'm always a bit heavy-handed with the pesto -- I wish my husband liked fish because this one is an absolute favorite of mine!


Summer chicken stir-fry, from Health magazine -- a simple & tasty dish


Italian sausage and potatoes, from Good Housekeeping -- I always increase the amount of veggies in this one -- all you really need to do is a little chopping, get it in the oven, and a half hour later you have dinner


Grilled goat cheese sandwich, from Anna Thomas' Love Soup -- this sandwich promotes a ho-hum grilled cheese to a delicious meal, perfect for days you're really short on time

Most of my go-to quick-ish recipes are things I make without a recipe at this point: stir-fries, pasta carbonara, pasta puttanesca, frittatas.


Here's one where I still go to the book, because the proportions of the flavorings are so good: http://www.eatyourbooks....ted-butternut-squash-and   There's a bit of chopping, but then it's hands-off while the veg's roast and the pasta water heats up.  Not great as leftover, though, so maybe halve for the first outing.


I keep meaning to riff on this basic process -- chop, season/oil, and roast veg,  combine with cream to add to pasta -- but haven't yet.
