Hi UK people, Can anyone recommend the best kind of milk chocolate for cooking with?

For a. chocolate chip cookies where I want the chocolate to stay roughly in whole pieces

For b. melting and combining for chocolate icings and desserts.

I have had bad experiences with Cadbury's Dairy Milk going gritty and not providing much flavour.  I am never quite sure whether to use cooking chocolate.  For cooking with dark chocolate I typically use Bourneville, which is fine.

Try Callebaut chips from Chocolate Trading co = Callebaut make a huge range of chocolate ingredients and I guess must know what they are doing

Thanks Ray, I imagine that is a mailorder thing.  Will look into it. If anyone knows of any good products I can get from the supermarket that would be very helpful.

Was going to write something defensive about using milk chocolate but decided against it!  :)

My husband basically has no sweet tooth, so if I make anything with chocolate it has to be really dark and quite bitter - that's all. I quite like the Menier dark chocolate and they do a milk so maybe try that one?
