I don't have the Instant Pot, but I do have an electric pressure cooker. I know some people just love them, but mine is currently residing in a cupboard in the laundry room. I moved it off the counter where it had been gathering dust to make space for a fuzzy logic rice cooker. A fantastic swap - I love the rice cooker and use it a few times a week (sometimes twice a day).
I cook a lot of beans, but tend to do them in a slow cooker where I don't have to worry about limiting volume depending on the bean, foam blocking the vent, to add oil or not...
The electric pressure cooker seemed like such a great idea, but in practice I haven't found much use for it. Maybe I'm just not a pressure cooker kind of girl. :)
I don't work outside the home so I have the luxury of starting food earlier in the day if need be. If I had a job where I had very little time to cook in the evening, I may think differently.
