    Aubergine pine nut + tomato dip: I don't think I've ever baked a whole aubergine before. I was pleasantly surprised how easy this was. I loved the dip but kids weren't keen. Also be warned it's not a very attractive looking dip. I think I might make this again to use as a sandwich spread. Updated to add DH liked the this and he's not overly fond of aubergine.
