      I picked this searching for ways to use ground buffalo, and it was an enjoyable chile. The taste reminded me of chile my mom used to make growing up, and the familiarity was pleasurable.

  • Cabbage with smoked sausage and apples

      This was a flavorful way to cook cabbage. I realized too late that the recipe called for smoked sausages rather than the uncooked pork sausages that I had on hand. My sausage option was not a great choice (they dried out). I’m sure this is great with the smoked sausages.

  • Sausage-stuffed acorn squash

      This was very flavorful for a slow cooker recipe, probably because it required some work before bunging the squash in to cook. The acorn squash could contain a fair amount of stuffing, which helped make it almost a complete meal with a salad alongside. However, it isn't perfect as a weeknight recipe, which is really when I need a slow cooker. Because it only cooks for six hours, it was in the warming phase before I got home, which might be risky safety wise. And if you have the time on the weekend, it is probably easier just to bake it.
