    The Ropa Vieja is a real keeper. Cooked in two phases, brisket is braised with bay & onions, creating a flavorful broth, then removed and shredded. In a second pan the tomato sauce, more onions, bay, white wine, white wine vinegar, roasted peppers, and spices are cooked down with some of the broth from the brisket. Finally the shredded brisket is added back to the pan. Moist, tender, with a sweetness from all the onions.
