    pg 160 PEANUT BUTTER VEGAN CHEESECAKE You will definitely need a Food Processor and a high powered blender to make this and do it justice. If you have these then this is a very easy and impressive dessert. I put my finished 'Cheesecake' in the freezer and sliced it into 15 portions when it was firm enough. Take out number of slices you require and let defrost in fridge overnight. We were in a rush to taste and it was still part frozen - NO, you will not get the true flavour if you do this! Do not leave on kitchen bench to defrost either as it will turn into a gloopy mess. This is a rich dessert but soft and deliciously peanut buttery. You do not need much to get your fix. It is not that sweet in taste but that's fine with me. It is perfect as it is. I suggest you add more sweetener if you have a sweet tooth.

    pg 68 HASH BROWN AND MUSHROOM STACK Mushroom were tasty and easy to do. The rosti type hash brown was a disaster; mixing the grated and squeezed sweet potato in with the thick egg, onion and flour mix was not going to work. There was some persistence involved here. The stack didn't hold its shape and trying to flip to cook the other side involved some improvisation of kitchen tools to keep together. When ready the hash brown collapsed into a mush on serving. I think I am going to rework this recipe and get it to do what it should do. Taste was good but a visual disaster! Do I blame my new induction hob or the recipe?

    pg 56 BUCKWHEAT PORRIDGE I have to say, I really liked this! Once you get over the unique taste of buckwheat you can begin to delight in its deliciousness. This was so quick and easy to prepare the night before.. no time at all. Then it was just a question of a rinse and blend with a few other ingredients. You can ring the changes with the toppings too. I have made this 3 times already. Quick, filling and nutritious !!

    pg46 HOT CHOCOLATE Smelt divine but I felt it needed some sweetness. I used homemade almond milk which I make just using almonds and water. So my base was delicious in its own right. We are not a sweet toothed family and we all felt the same that it was not the best take on a 'healthy' hot chocolate.
