Publishers Text

Howdy, Chuck wagon chow & other Culinary Conundrumsis a collection of recipies. Some of which might have been found on the trail during the Mexican vaquero and early American cowboy. The staples for the cowboy, defined as "an appetite sittin' in the saddle," were the three B's Beans Beef and Biscuits. It was the cook's responcibility to find as many diffrent ways to make them appetizing during the difficult round-ups and long trail drives as he could. However, in addition to the three B's the Cokkie, as he was called (amoung other things), often made do with wild critter supplements such as rattlesnake, quail, rabbit (fried, stewed or otherwise). venison, and sometimes even the ever present coyote. In the tradition of the National Festival of the West, we hope you find the food fixin's in Chuck Wagon Chow & Other Culinary Conundrums as much fun to fix as they are to eat....
