    Continuing my previous note on this book: I can recommend my own easy homemade caviar version, too, made from black quinoa! Cook the quinoa pilaf-style, using roasted walnut or hazelnut oil to first sauté/toast the grains. Add a very strong vegan dashi (Miyoko Schinner's "Rich See-Food Stock" from her "Vegan Pantry" is ideal) darkened with tamari or coconut aminos to boil the quinoa until the grains are cooked and al dente. Drain (if necessary), steam for a few minutes so grains are individual and separate, remove from heat, and gently stir in another couple of tablespoons of the walnut/hazelnut oil to just coat the grains until they glisten like real caviar. Refrigerate, then eat plain (with a squeeze of lemon, perhaps) or serve with vegan blinis and sour cream. This may not come from the the Caspian, but it tastes surprisingly close! And it's infinitely cheaper! Tweak the recipe, using white or red quinoa, for other colors/flavors. Or use amaranth for small sushi caviar.

    Translated from the French, this wonderful book brings a wealth of recipes for festive foods from the grand French tradition made vegan. Think foie gras (or faux gras, if you will), caviar, a variety of terrines, elegant soups, and more! I would note that some of the recipes will require a bit of adaptation for Anglo-Saxons: many call for soy cream, which is difficult to find commercially in the U.S. and other English-speaking markets. It can be made easily at home from online recipes, or other vegan creams (usually nut-based) more readily available in markets can be substituted. Laforêt has a great caviar recipe which doesn't require expensive molecular gastronomy ingredients. This is rich food for important holidays like Christmas and New Year's, but the recipes are suitable all year long for any festive or company meal. You definitely want this book!
