Cheesy cheddar crackers, p151. These were so-so. They puff up whether pricked with a fork or not. They're not like "the real thing", but certainly easy to make.

Mango, lime and coconut energy bites, p128. These taste great, but are very calorific!

  • eeeve on November 18, 2021

Creamy cauliflower mashed potato, p121. Tastes great, the cauliflower is not too overpowering, even DH can deal with it! The amount that the recipe makes is exactly four portions, we were a bit miffed we didn't get any leftovers, so would definitely double next time.

Sesame chicken noodles, p76. We make these with tofu instead of chicken. The dish is sweet and sticky and we like that. Note to self, don't forget the cornflour to thicken the sauce!

Tomato and lentil soup with parmesan crips, p56. Only made the soup. Strange flavour. Not totally bad, but won't repeat.

  • eeeve on November 18, 2021

Broccoli and cheese quesadilla, p53. These are nice, especially quick to do when there's some leftover cooked broccoli. Must remember to wait until the pan is properly hot when cooking them, so the cheese melds everything together and they don't fall apart.

Healthier pop tarts, p42. Made the apple filling option and also added lemon icing glaze once cooled down. Loved them, tasted like apple turnovers! Unless I completely misunderstand the instructions, they made 4 pop tarts and not 8 as stated in the info bar at the top. I did think each tart came out quite large, especially for a child, but wouldn't be able to fit in three apple slices into the halved size. Will try smaller size next time though.

Chocolate granola, p23. This was okay, came out more like a toasted muesli than a granola.
