Cauliflower Mac 'n' Jack with crispy caper bites: this was a bit of a disappointment. I wholeheartedly endorse mixing roasted cauliflower with mac n cheese. However, this particular recipe came out far too salty for my taste and seemed to use every pan in my kitchen. If trying again I would salt the roasted cauliflower and then not add any to sauce until after tasting. I did not use the optional Jack Daniels, maybe that would make a difference to the flavour balance? I also actively disliked the crispy caper bites, when normally I love capers. If making again, I think I would try frying them without the flour coating. I seem to remember Gaz Oakley's cauliflower cheese sauce being more straightforward to make - this roux seemed to take forever and the milk boiled over twice whilst I was distracted by children. Dish needs to be served with greens for contrast imo. My kids thought this was ok (apart from capers) but nobody loved it.
