    This long note is specifically about the lemon sponge pie recipe. I am chasing a taste memory for my father and it features sponge through and through. My early attempts were wet-bottomed with a thin sponge top, and that's how most of these pies look if you go searching for recipes online. I finally nailed it, but with some tweaks. Use this recipe base. It uses proportionally more egg and liquid than other recipes. This allows you to use a large, 12" tart pan (adjust bake time accordingly). Wider pan = less wet bottom. Omit butter from the filling and use warm milk for the liquid. No butter = less deflation of egg whites. For the pie dough I'm partial to the pate minute recipe on tupperware.fr.
