      I have to confess I used Greek yogurt so it wasn’t vegan but it was good! I had to do some tweaking with the quantities, I made 100g of croutons and only used 100g of yogurt. The croutons were incredibly good, I might have snacked on a few while I put the salad together.

      I too used non fat greek yogurt and 120 grams of croutons which was enough for me. I swapped cilantro for the basil and added radishes to the cucumber. Will make again and often.
