    Chikad Choley (Punjabi), P93. Another great dish from this book. I have cooked so many and none have failed me. Chickpeas cooked with whole spices, then a spicy masala is made which is mixed with the chickpeas and allowed to simmer. NOTE That's a bit much for the Instant Pot - they should be soft but not soup. Mash some chickpeas against the side of the pan in the final simmer, if needed. Serve with rice or bhaturas.

    Nutrinugget Keema (Soya Nuggets Mince, TVP), P63. A simple and good way to use the TVP mince sitting in the back of the cupboard. This book has a number of recipes for TVP. I used all the veg in the fridge, not just the peas as per the recipe (cauliflower, eggplant, carrots, beans and greens, and sauteed them with the onions). Also I didn't add the kishmish (raisins). Delicious. EVEN BETTER the next day!

    Red beans curry (Peshawari rajmah) [Punjab] P95. Made this a light curry - added more tomatoes (tinned) and some shredded zucchini and peas. Omitted butter, cream and yoghurt. Delish! Cooked 4/23.

    Potato and spicy lentil balls (Aalu varian) [Punjabi] P13: Delish! The varian I used are wadiyan available from Punjabi or North Indian grocery shops, also in some general Indian shops. I learnt the hard way that these lentil and spice balls are highly spiced in their own right and did not add any more chillies/chilli powder. A wonderful dish made several times. First cooked: 10/08'ish.

    Aalu in aalu (Potatoes in potato gravy) P5: An interesting dish in which partially cooked potatoes are cooked in a potato gravy (mashed potatoes, thinned, with chillies and spices). It is actually very good. First cooked 9/07.

    Hing-jeera aalu (Potatoes with asafoetida and cumin seeds) [UP] P4: So good, but more of a subtle curry. I used more potatoes than specified. Even better the next day. Next time I made it I added onions. Green chillies and ginger can also be added for more punch. First cooked 8/07.
