    Tomato, Basil, Quinoa Salad (pg. 25] : I took some liberties here but did stick to the essence of the idea (while making a 1/2 recipe). I made the quinoa as instructed & made the dressing verbatim. I deviated by upping the veg...I sautéed a mix of sliced red, yellow & orange peppers and then threw the grape tomatoes in at the end to blister with some minced garlic. I skipped the red onion this time as I was also making some oven roasted onions, but I did add some chopped green onions at the end with the fresh basil. We both loved this. Note to self: 1/2 cup of dry quinoa = way more than the 2 of us need!
