The author was a celebrated food writer who owned hotels and was a 4th generation restauranteur. At one time he owned one of Paris's "Big Four" dining establishments. Oliver died in 1990. Here is his well received cookbook, tackling 400 French recipes, plus a rundown on wines, the care of utensils, with side looks on how to roast, poach, and braise.
