From the author: Chez Moi, meaning (my home) is a very common expression, as like most of us, it is a place of love, comfort, perhaps even security.

Home takes us as far back as our childhood. In fact, with my previous books, especially the first one (French Brasserie Cookbook), I do reminisce a lot about it. No wonder, as it was so special. The following two books (Revolutionary French Cooking and French Countryside Cooking), I began recalling and retracing my journey as a chef in the trade that I still love so much.

This time, the reason I chose the title CHEZ MOI, is due to the fact that I can freely create a very special, simple, intimate, welcoming environment for myself, my family, and my friends, without any constraints.

This is where myself and my family also feel comfortable. I can do my own kind of magic if I may say so, here in the beautiful countryside. I am able to search for inspiration, while walking in the vast fields, meadows , orchards, or even through small cops knowing that any ideas which come naturally to me ,can be cooked in my home for my family and friends, including of course everyone’s favourites , you know what I mean, as these are also the reasons for returning home to our parents’ home, or grandma’s , and we always hope that they will cook what we love and miss the most . Cooking these home recipes for supper to our delight, as they are irreplaceable. We will often return again and again until our children grow up and cook for us in the circle of life. The distinctive, comforting smell of home cooking cannot be forgotten, stirring up fond memorable aromas and tastes, it is there to stay for ever. Home, CHEZ MOI.

When friends come to visit my place (CHEZ MOI) I love the fact that I can cook my simple family favourite dishes and share my immense passion for great food and wine with them, bringing everyone together.

Hosting at home is always so special, I remember when my parents had friends and family around, sometimes up to 20 people at the table in our large dining room.

A lot of work went into it, but what a laugh, such incredible banter. Mum was very organised, rarely in any panic, but we all had to help, all hands-on deck. My sister, Dolores setting the table decor, my brother Patrick with me on vegetable peeling prep, when I could find him that is, because he always tried to hide to avoid helping out hahaha. Dad was in charge of the wine and tasting (a lot more than he should, as you would expect, the problem sometimes, he would become a bit tipsy before the bird was ready, as more wine for him and less for the goose, capon or turkey depending on the year, or mood, or what was best available. So many funny memories and storytelling I am sure many of us can relate. The hilarious stories repeated each year.

Sadly, my parents are long gone to other worlds, but I carry on the flag to keep those treasured memories alive.

Those special dishes we all love, and now cook for our own children. I now cook for my son Antoine, my partner Elise, her sons, family and friends, so that they all enjoy CHEZ MOI, they always enjoy these family favourites, and we share some precious unforgettable moments.
