Notes about Recipes in this book

  • Merchant's spinach purée (Palak bharta)

    • eve_kloepper on May 16, 2018

Super easy and delicious. I cooked spinach in microwave without any added water. That saves having to squeeze it dry.

  • Lemon lentils (Nimbu masoor dal)

    • zorra on September 23, 2014

Favorite recipe for decades from the acclaimed filmmaker & cook, full of flavor. I reduce the oil & remember to remove the lemon shell & cinnamon sticks before storing. Original version makes a large amount, but we enjoy any leftovers. Appears online in half quantity here: http://touch.latimes.com/#section/-1/article/p2p-51338250/

Publishers Text

His first cookbook, "Ismail Merchant's Indian Cuisine," was chosen by both the New York Times and the Los Angeles Times as one of the top ten cookbooks of 1986. From his native India, Merchant brings together a new selection of recipes both traditional and innovative - spinach tomatoes and moong dal, squash with split chana lentils, potato bread, cauliflower pickle - delicacies spiced with a unique accent all his own. From appetizers to desserts, these recipes are exquisite to prepare and delightful to taste.
