The authors place this book at the disposition of patients necessitating diet therapy. The idea is to increase the compliance of patients bringing together therapeutic needs and tasteful regional eating habits. In proposing dietetic restriction the intention is not to deprive the patient of the pleasures of food, pleasures which are here presented in a purely Mediterranean diet. Similar publications are certainly valid from the technical point of view, apart from those inclining towards ethnic food, which require ingredients presented against a background of customs and a way of thinking so different from the Mediterranean one which is widely recognised as the best one, under a clinical point of view. Hence, the idea of presenting and consolidating recipes typical of the Mediterranean region using the necessary ingredients which are sufficient for the desired therapeutic purpose.
