    I made the Salmon Fillets with Mango, Peach and Pineapple Salsa-and will not make this again. I do need to be transparent though. I did not have time to soak the wood plank so I baked it in the oven. Additionally, I used a store bought mango salsa since the meal was for two people and left over fruit would go to waste. Everything else remained per recipe. I served the mango salsa on the side. Overall. The mango salsa, honey and onion washed away any flavor from the salmon (I used a good salmon too). My better half and I enjoy the flavor of salmon and the thought was that these accompaniments used lightly would enhance the salmon flavor. That didn’t happen for me. Note: this recipe is on the cover of the book.
