Publishers Text

Honey is complex in flavour, texture and aroma and this collection of recipes is honey as you have never experienced it before. Here is a guide to honey, and a collection of over 80 creative recipes, which bring out the pure and natural flavours. Included are some traditional recipes and also many new ones to delight and challenge your taste perception. Also included are tasting notes to introduce the reader to the characteristics of different varieties, hints for cooking with honey, notes on storage and an introduction to honey bees, their history and the health benefits of honey. Maureen Maxwell is a qualified and creative chef and sommelier who has been in the wine and food industry for 27 years. Aged 19 in 1976 with her bother and two family friends, she formed the Matua Valley Wines partnership, and at 24 created the very successful Hunting Lodge Restaurant. The new millenium sees her establishing the eco-friendly BeesOnline Honey Centre and Cafe, combining her culinary skills with sustainable beekeeping.
