This isn't well known, but on his mother's side, Michel Troisgros is half Italian, and his childhood in Roanne was nourished by memories of Italy. For him and his siblings, in fact, everyday fare was prepared by their maternal grandmother, Mémé Forte. It was only much later, when his professional career was well underway and after having travelled throughout Italy, that the chef decided to dive into the treasures buried in his memory. Professional and household cooking meet in this book, as much a collection of recipes as a sentimental catalog.
