Winter squash and chickpea soup from The Mediterranean Slow Cooker by Michele Scicolone

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

  • Eat Your Books

Can substitute acorn squash for butternut.

    p. 30 – This soup was a bland, boring disappointment. Perhaps it’s because none of the ingredients are sautéed in advance and they just go into to slow cooker raw that the end result has a non-distinct, one note flavour profile. Nothing could revive this hot mess. Just plain dull and not worth repeating. I’m usually a big fan of MS’s recipes but this one missed the mark by taking some otherwise tasty, seasonal ingredients and combining them to produce this lackluster dish.
