    I've made this several times since it appeared in the WaPo 3 years ago. This is a great, quick, easy, light recipe that comes together in no time. I make a few minor changes: I saute the leeks much longer than the recipe calls for (which is 1 minute), who wants to eat raw leeks? I then add the shrimp and the spinach so that it can wilt. I add more of the roasted peppers than the recipe calls for -- they add a lot. Also, I don't add the cup of vinaigrette to the dish -- I allow each diner to spoon vinaigrette onto their individual serving, thus cutting down on the amount of oil. The vinaigrette is very tasty and can be used with other dishes.
