Classic cream tea from Say It with Cake: Celebrate with Over 80 Cakes, Puddings, Pies and More from the Original Boy Who Bakes by Edd Kimber

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Used frozen raspberries to make the Quick Raspberry Jam. The bag of frozen raspberries only contained 2-1/2 cups of berries, so I decreased the superfine sugar to 1-2/3 cups. It was very easy, quick and the jam tasted very fresh and not over processed: more like raspberries, less like sweet, red-colored jam. The jam has to be stored in the refrigerator so it doesn't have as long of a shelf life as processed jam, but the recipe only made a small batch.
