    Made this soup with pre-packages beets and also added the green stalks of the fennel (seemed a waste to throw them onto the compost heap), so it didn't turn out as pink as it should. However: very tasty. The sweetness of the beets and apple and the fennel complement each other very well. Use less of the stock if you want a thicker soup (I used 4 instead of 6 cups, still turned out great).
