    This isn’t a baked mac and cheese, but rather a grown up version of the blue box and I mean that in the best way. I make this every Thanksgiving and usually quadruple the recipe because the kids always, always finish it. Don’t skip the blue cheese… It adds the perfect amount of umami and depth. Without it, I think the combination of American and cheddar would taste a little too plain. Creamy, nostalgic, and always a crowd pleaser.
